Sono da preferire quelli complessi (cereali in chicco, pane, pasta, patate) rispetto a quelli semplici (zucchero, frutta, dolcificanti). In genere sono contenute in buona quota nei legumi e nei semi oleosi (mandorle, pinoli, pistacchi, arachidi\u2026), ma anche verdure, frutta e cereali integrali si difendono a spada tratta per quanto riguarda il contenuto proteico! Ricordiamoci che le proteine derivano in primis dai vegetali (per questo le troviamo nella mucca!). Ultimamente si stanno diffondendo dei preparati come seitan (glutine di frumento), tempeh (fagioli di soia fermentati), tofu (latte di soia cagliato) e soia destrutturata (lo scarto proteico dell\u2019estrazione dell\u2019olio di soia) che contengono una quantit\u00e0 di proteine molto elevata. Le verdure sono ESSENZIALI nella dieta vegetale e se vi sembra strano che io ci tenga a sottolinearlo, vi assicuro che moltissimi miei pazienti arrivano da me considerando ancora le verdure come semplici contorni. Ovviamente non bisogna abusarne onde evitare di accumulare massa grassa in eccesso. Nei bambini il dosaggio \u00e8 pi\u00f9 basso e va crescendo con l\u2019et\u00e0 (5 mcg fino ai 4 anni, poi 25 mcg dai 4 ai 10 anni, per poi passare al dosaggio degli adulti). Questo pu\u00f2 essere soddisfatto con porridge, pancake\u2026 ma anche cose molto pi\u00f9 semplici, come yogurt di soia, pane con crema di semi e marmellata! Sperimentare \u00e8 sempre il modo migliore per capire cosa ci piace di pi\u00f9!<\/p><p><b>Pranzo\/Cena:<br \/><\/b>Anche qui devono essere presenti tutti i nutrienti, pi\u00f9 le verdure (crude o cotte). Io consiglio sempre di iniziare con delle verdure crude (per fare il pieno di vitamine e placare la fame pi\u00f9 vorace) e poi di consumare delle verdure cotte: in questo modo aumentiamo l\u2019apporto di fibre e di vegetali quasi senza accorgercene. A pranzo e cena non devono poi mai mancare carboidrati complessi (pane, cereali in chicco, pasta, polenta\u2026) e proteine (soprattutto legumi, ma possono benissimo essere anche i preparati pi\u00f9 particolari: tofu, seitan, tempeh\u2026). Utilizziamo del buon olio a crudo per non perderne i nutrienti contenuti.<\/p><p><b>Spuntini:<br \/><\/b>gli spuntini possono essere fatti con pane e creme di semi oleose (tahin, crema di arachidi\u2026) oppure con frutta e semi oleosi, oppure bevande vegetali e frutta: tutto dipende da quanto siamo attivi durante il
